  1. Sausage Stuffed Mushrooms:

    40 medium mushrooms

    1 lb. bulk Italian sausage

    1 C. shredded Mozzarella

    1/2 C. seasoned bread crumbs

    parsley

    Remove stems from mushrooms and chop stems. Set aside.

    In a skillet, cook sausage till well browned. Remove meat with slotted spoon and let drain on paper towels.

    Vver medium heat, cook chopped stems in drippings until tender, about 10 minutes. Stir frequently.

    Remove skillet from heat and stir in sausage, cheese and crumbs.

    Fill mushroom caps with mixture.

    Place in a 15 x 10 inch pan and bake for 15 minutes at 450º

  2. Chicken Mayo (affectionately known as Chicken Balls!)

    2 sleeves of Keebler Club Crackers
    8 tablespoons melted butter
    2 tsp garlic powder
    1/4 tsp pepper
    Mayonaise
    1.5 lbs skinless, boneless chicken breast cut into 3/4" strips

    Mix crushed crackers, garlic powder, pepper and melted butter.
    Coat chicken in mayo, then dip in cracker mix. Roll into a ball. Place into casserole dish.
    Bake at 350 degrees for 1 hour, covered with aluminum foil, then 10 minutes uncovered.

    Finally, get your grub on!

    Orange Sweet Potatoes

    A tasty twist on the traditional side dish. From Prevention Healthy Cooking.
    Prep Time: 15 min
    Start to Finish: 1 hr 10 min
    makes: 4 servings


    1 tablespoon butter
    3 large sweet potatoes or yams
    1 cup orange juice
    1 teaspoon grated orange peel
    3/4 teaspoon salt
    1/2 teaspoon grated nutmeg
    1/4 teaspoon ground black pepper
    1/4 cup packed brown sugar

    1. Preheat the oven to 375°F. Coat a 9” x 9” baking dish with cooking spray.
    2. Brown butter in a small skillet over medium heat, swirling the skillet, until butter turns a nutty color. Remove from the heat and set aside.
    3. Peel sweet potatoes or yams, cut in half lengthwise, and then into 1/2”-thick slices. Place in the prepared baking dish. Pour orange juice over sweet potatoes or yams. Sprinkle with orange peel, salt, nutmeg, and pepper. Top with brown sugar and browned butter. Cover and bake 40 to 45 minutes, or until sweet potatoes or yams are crisp-tender. Uncover and cook 12 to 15 minutes, or until juices are almost absorbed.

  4. Vanilla wafer & mint cookie mini hamburgers

    Nilla wafers
    Thin Mints or Keebler Grasshopper cookies
    red and yellow frosting
    sesame seeds
    optional: shredded coconut & green food coloring

    If using coconut (as lettuce), combine food coloring with a few drops of water. Add coconut and cover the container, shake until coconut is tinted. Set aside.

    Brush rounded side of half the Nilla wafers with a little sugar water or egg white and sprinkle with sesame seeds. Let dry.

    Layer plain wafer, yellow frosting, chocolate cookie, red frosting, green coconut if desired, and sesame covered wafer to look like a mini hamburger!
