  1. I call this first timer's Turkey!!!

    1. First brine the turkey overnight, I used a citrus brine with the following ingredients..

    1 cup kosher salt
    1/2 cup chopped onion
    1 lemon cut into wedges
    2 tbsp chopped garlic
    1 tbsp ground pepper
    1 tbsp rosemary
    1 tbsp thyme
    4 bay leaves

    Rub down the turkey with a handful of salt then place the remainder of the salt and all other ingredients into a pot large enough to hold the whole turkey and then fill the pot with cold water until the turkey is submerged. If you have a large turkey then use a small cooler and fill it with water and ice.

    2. When you are ready to cook the turkey take it out of the brine and rinse it off, you do not need to leave the brine spices on the turkey it has been soaking in the flavor all night! Now pat the turkey dry with paper towels or a kitchen towel.

    3. For cooking you should place the turkey in a pan or turkey tray with high sides to capture the juice. Preheat the oven to 450 degrees.

    4. Now butter the turkey by sliding your hand under the skin but under the breast of the turkey to create a space between the skin and breast. Melt a quarter stick of butter and rub it on the breast under the skin..

    5. Now pepper the turkey by lightly sprikling pepper all over, you do not need salt because you soaked it overnight in a lot of salt and you are going to wrap the turkey in bacon!

    6. Take a one pound package of maple bacon and stretch the pieces accross the turkey and hold them down with tooth pics, cover the whole turkey! To get the legs wrap the bacon aound the legs a couple times then hold them down with tooth picks as well.

    7. Stick a meat thermometer in the thickest part of the turkey in the breast. Then wrap the turkey in five large pieces of aluminum foil but create a small space so you can see the meat thermometer.

    8. Place the turkey in the 450 degree oven for 30 minutes then turn down tempature to 250 degrees and add 20 minutes of cooking time for each pound of the turkey, for example if it's a 12 lb. turkey cook it at 250 degrees for an additional 4 hours. However, the thermometer should be at 170 degrees in the thickest part of the turkey to really make sure it is done.

    9. When you take the turkey out stick the thermomter in various places to make sure the meat is at least 170 degrees

    10. Let it stand for 20 minutes and then slice it up and enjoy!

  2. This is Kim's gravy recipe!

    After you take your turkey out of the cooking tray or pan take the pan with all of the juice in it and place it on a burner on the stove. Then add 2 parts chppoed onion, 1 part chopped carrots, and 1 part chopped celery. Place the chopped vegtables in the hot turkey juice and cook them until the start to get carmelized. SLOWLY add in flour and quickly wisk it until it disolves, wisk very fast so you don't get clumps. Keep adding flour until you get to the desired thickness, if you need more juice add chicken broth. Everyone said this was the best gravy they had ever had!!! Enjoy

  3. This is my Nano’s Candied Yams :)

    You will need:
    - Sweet Potatoes
    - Brown Sugar
    - Sticks of Real Butter
    - Marshmallows
    - Dark Karo Syrup

    Night before boil sweet potatoes (just like real potatoes) until you can easily push a fork through them. Drain the water, and set them out on a paper towel to cool and dry over night.

    The next morning:
    1. Peel the sweet potatoes and cut in 1 ½ inch thick round pieces.
    2. Grease a 9x11 baking dish with real butter (sides and bottom).
    3. Place the sweet potatoes in rows in the greased pan.
    4. Place a slice of butter on top of each sweet potato.
    5. Sprinkle brown sugar over sweet potatoes.
    6. Pour dark Karo Syrup over sweet potatoes to about ½ inch of edge of pan.
    7. Place in Oven at 250 degrees F for 2-4 hours. (No rule here. The longer, the better they seem to taste.)

    Before Serving:
    1. Place a marshmallow on each sweet potato.
    2. Place under Broiler for only a few seconds. You must watch the marshmallows turn brown.

    Green Bean Casserole

    - 1 can (11 ounces) Trader Joe’s Cream of Portobello Mushroom soup
    - 1/2 cup milk
    - Baby Portobello mushrooms (“Baby Bellas”)
    - Dash ground black pepper & sea salt
    - 4 cups cooked cut green beans
    - 1 1/3 cups French's® French Fried Onions

    1. Slice & saute the package of baby bella mushrooms, the more caramelized, the richer the flavor.
    2. Stir the soup, milk, mushrooms, salt, black pepper, beans and 2/3 cup onions in a 1 1/2-quart casserole.
    3. Bake at 350°F. for 25 minutes or until the bean mixture is hot and bubbling. Stir the bean mixture. Sprinkle with the remaining onions.
    4. Bake for 5 minutes or until the onions are golden brown.

  5. German Stuffed Crescent Rolls

    1 - Can (8 oz) Pillsbury Crescent Rolls
    8 - Slices Prosciutto
    8 - Thin slices Muenster cheese
    1 - Can Cranberry Sauce

    Heat oven to 350°F. Separate dough into 8 triangles. Place 1 piece of Prosciutto on each triangle; place a strip of cheese down center of the Prosciutto. Add a teaspoon of cranberry sauce to each. Fold in edges of Prosciutto to match shape of dough triangle.

    Roll up each crescent, ending at tip of triangle. Place with tips down on ungreased cookie sheet.

    Bake 15 to 19 minutes or until golden brown. Immediately remove from cookie sheet. Serve warm.

    PS: Make more than 8. ;)

    Grandma's Mashed Potatoes:

    Ingredients:
    5 lbs Potatoes
    1 Block of Cream Cheese
    1 Container of Sour Cream
    1 Stick of Butter
    2 lb bag of Mexican Cheese Mix
    2 Tablespoons of Garlic Powder
    Salt and Pepper to taste
    1/2 Cup of Milk

    Method:
    Skin, Cut, Boil and Mash Potoates as normal. Add butter and milk to create a smooth and creamy consistency. Add sour cream, cream cheese, garlic powder, salt/pepper and 3/4 the bag of cheese. Place in a casserole type dish. Add the remaining cheese to the top and bake for 15 minutes (or until cheese is fully melted on top)
