  1. Ground turkey lettuce wraps

    I don’t remember what exactly I put in them, and there are so many different ways to make these, so throw in whatever ingredients you want!

    1 tbsp peanut oil or vegetable oil (or slightly more)
    3 tbsp minced red onion or shallots
    2 tbsp minced garlic
    2 tbsp grated ginger root
    1 1/2 lbs. ground turkey
    4 tbsp soy sauce
    1 large head or 2 small heads iceberg or butter lettuce

    Other suggestions:
    1 tbsp chile garlic sauce (I left out, but add to taste if you like spicy foods)
    1 tsp. fish sauce (I left out b/c I couldn’t find it at the store)
    1 cup chopped fresh cilantro
    1/3 cup chopped peanuts for topping
    1 cucumber, peeled, seeded, chopped (about 1 1/4 cups)
    1/3 cup coarsely chopped fresh mint plus 1/3 cup small mint sprigs
    1/4 cup sliced almonds, toasted
    1 red bell pepper, diced

    Heat oil in large frying pan. Sauté onion, garlic, and ginger. Add ground turkey, soy sauce, chili garlic sauce, and fish sauce and cook until turkey is browned. Fill lettuce leaves with mixture and serve with soy or teriyaki sauce for dipping.
