4 lb very fresh ahi tuna steak 1 1/2 cups olive oil 5 limes, zest grated 1 cup freshly squeezed lime juice 2 1/2 tsp wasabi powder/paste 2 1/2 tbsp soy sauce 2 tbsp hot red pepper sauce 2 1/2 tbsp kosher 1 1/2 tbsp freshly ground black pepper 1 1/2 tbsp cups minced scallions white & green parts (12 scallions) 3 1/2 tbsp minced fresh jalapeno pepper, seeds removed 5 ripe Hass avocados 1 1/2 tbsp toasted sesame
1, Cut the tuna into 1/4 inch dice and place in LARGE bowl 2, In a separate bowl, combine the olive oil, lime zest, lime juice, and pepper. Pour over tuna, add scallions and jalapenos, and mix well. 3. Cut avocado into a 1/4 inch dice. Carefully mix the avocado into the tuna mixture. Add toasted sesame seeds and season to tast. 4. Allow the mixture to sit in refrigerator for at least 1 hour for the flavors to blend. Serve on crackers.
